This blend of 60% Chardonnay with 30% Chenin, 5% Pinot Noir and 5% Mauzac is made by the "méthode traditionelle", which, while most associated with Champagne, was almost certainly used first in Limoux in the 16th century. A pretty pale lemon. The nose has a hint of apple, followed by good fruit on the palate, racy and long.
