This "appassimento" wine is based on the local Veronese Corvina grape backed up by Merlot. The appassimento method involves fermenting about 40% of the grapes immediately after harvest as usual, but leaving the other 60% in aerated conditions for a couple of months after harvest and only then fermenting them. During the delay the grapes dry out, losing about half of their weight, concentrating the colour, substance and aromas.
Fiorebella combinines wonderful fruit with sufficient structure to hold it all together in perfect balance. It's ridiculously good drinking now, but will age well for a good time yet.
At this price, it's brilliant value.
